Fleur de Sel

Fleur de sel is a French sea salt; the name means  “flower of salt.” It is raked by hand when it collects in shallow pools that form in coastal areas of France—the most famous being Brittany—and is therefore pretty expensive. With its distinctively delicate saltiness (and its price) it is typically used as a garnish, applied just before serving. It is available in gourmet shops, specialty spice shops, well-stocked supermarkets, and online.
