Chinese black vinegar is made from black glutinous rice and has a slightly smoky flavor. Chinkiang black vinegar, named for the province where it is made, is considered the best Chinese black vinegar. It is used in sauces, stir-fries, and other dishes. It is available in Asian markets. If you can’t find it, use ½ tablespoon white vinegar for each tablespoon called for in your recipe.
