Couverture Chocolate

Couverture chocolate is a high-quality, often expensive chocolate that must contain at least 35 percent cacao and at least 31 percent cocoa butter (some manufacturers use as much as 39 percent). The main allure of couverture chocolate is that the higher percentage of cocoa butter gives the chocolate an improved gloss, snap, and smoothness. It’s wonderful for as a coating chocolate becauseĀ  the fat content makes it easy to melt.
