Fenugreek is a mildly bitter spice commonly used in Indian, Central Asian, Turkish, Persian (Iranian), Middle Eastern, Egyptian, Eritrean, and Ethiopian cuisines. It is called hilbeh in the Yemenite Jewish community. It is used in curries, spice mixtures, pickles, breads and many other dishes. Fenugreek is available fresh in some specialty markets, especially Indian markets, but the seeds and dried leaves are available, whole or ground, at spice shops and at Middle Eastern markets, or online.
