Okay, I'll admit it. I'm really proud of this filled challah I created for the Valley Fig Growers for their website. It's just about the perfect challah for Rosh Hashanah—you don't even need to dip it in honey, because it's got the sweetness of honey and figs built right into the bread. You get a burst of sweet flavor with every mouthful.
The picture shows a beautifully bronzed loaf, and that is proof that it can develop a gorgeous chewy crust. But if that's not your thing, that's OK. As long as you bake it long enough for the insides to set, this will still make a beautiful loaf. Like I said, perfect—and flexible too!
