Caribbean Punch

Caribbean Punch

Take a sip of this lightly spiced, nicely balanced rum punch and you can almost feel the Caribbean breezes. Remember that it’s best to chill your glasses ahead of time so that the drinks stay colder longer.


1 cup dark Caribbean rum

1 cup light brown sugar

Juice and zest of 4 large limes

4 cups citrus-flavored Hint Fizz or unsweetened citrus seltzer

6 dashes of any citrus-based bitters

10 scrapes fresh nutmeg

Pinch of ground allspice



Lime, cut wedges or thin slices, seeds removed

Pineapple slices


  1. In a pitcher, combine the rum, sugar, lime juice, and zest and stir for about 5 minutes, until the sugar is dissolved (see Kitchen Tips).
  2. Pour in the seltzer and stir. Add the bitters, nutmeg, and allspice and stir again.
  3. Fill 4 chilled highball glasses with fresh ice and strain the mixture into them. Garnish each with lime and pineapple and serve.

Kitchen Tips

The base of the drink (the rum and dissolved sugar mixture) can be made up to two days in advance and stored in the refrigerator in a covered container.
