Sparkling Rosé Mint Granita

Sparkling granitas are delicate and refreshing. Serve as a palate cleanser or call them dessert—either way, they are an elegant addition to any meal.
2 cups lightly packed mint leaves and stems
1 cup water
1 cup (224g) sugar
1 750-ml bottle chilled dry Champagne, sparkling wine such as Prosecco, or rosé brut
3 tablespoons fresh lemon juice
- Combine the mint, water, and sugar in a medium saucepan over high heat; bring to a boil. Lower the heat and simmer 5 minutes.
- Remove the pan from heat and let stand 15 minutes. Strain syrup into a bowl and cool completely.
- Stir the sparkling wine and lemon juice into the syrup. Pour into a shallow, nonreactive dish. Freeze for several hours or overnight, running a fork through it two or three times during the freezing process to achieve a granita texture.
