This oil is refreshing year round. A few drops make a sparkling addition to fish, chicken, or any green vegetables.
¼ cup orange, lemon, lime, citron or grapefruit zest (see Kitchen Tips)
2 cups canola, grape-seed, or safflower oil
- Combine the zest with the oil and let stand, covered, at room temperature for 3 days.
- Strain well. The oil can be covered and stored at room temperature for up to 6 months.
- You can grate or mince the peel if you choose, but we liked the way it appeared in the bottle in long strips.
