Creamy Noodles and Poppy Seeds

Poppy seeds elevate this homey vegetarian noodle dish to a higher level of deliciousness. It’s easy to serve hot or cold, and it’s a great brunch dish when paired with a fruit salad and mimosas.
1 package (12 ounces) thin yolk-free or gluten-free egg noodles
1 tablespoon salted, cultured butter
⅓ cup poppy seeds
2 cups nonfat sour cream or nonfat plain Greek yogurt
¾ cup nonfat cottage cheese
1 tablespoon honey, preferably mild
Zest of 1 lemon
½ teaspoon freshly ground white pepper
- Cook the egg noodles according to the package instructions, but remove them from the heat when they are al dente. Drain in a fine mesh sieve and transfer to a large bowl. Add the butter to the noodles and allow it to melt. Stir to coat.
- As soon as the butter is melted, add the poppy seeds, sour cream, cottage cheese, honey, lemon zest, and white pepper and stir well to combine completely. Serve chilled or at room temperature.
