Creamy Roasted Garlic Dip

Creamy Roasted Garlic Dip

This is an easy, delicious dip for artichokes or a crudité platter. It’s a wonderful do-ahead dip because you can roast the garlic in advance (just 5 minutes for prep time and then an hour in the oven). You can whip up the dip itself in minutes. Try it with our Grilled Baby Artichokes and Fennel or our simple Steamed Artichokes or Grilled Artichokes.


1 head Roasted Garlic

½ cup mayonnaise

2 tablespoons milk

3 teaspoons white balsamic vinegar

2 teaspoons cracked black pepper

Juice and zest of 1 lemon


  1. Combine the roasted garlic, mayonnaise, milk, vinegar, black pepper, and lemon juice and zest in the bowl of a food processor and pulse until fully combined.
  2. Serve immediately or transfer to a container, cover, and refrigerate for up to 3 days.
