Cucumber Mint Yogurt Sauce

Cucumber Mint Yogurt Sauce

Light and refreshing with a nod to Indian raita.


1 cup plain, nonfat, yogurt, strained

2 Persian cucumbers, peeled and finely diced, about 1¼ cups

⅓ cup fresh mint, minced or 3 tablespoons dried mint

½ teaspoon salt

½ teaspoon freshly ground pepper


  • Mix all of the ingredients together in a bowl. Serve as a dip.
