Dark and Stormy

It was a dark and stormy night...and a bracing libation was in order. And as our summer intern Cecilia Kiker explained, all it took was a little rum, some ginger beer, and ginger liqueur to turn her family’s favorite classic summer drink into a gingerfest. We liked it so much, we served it when the sky was clear and sunny.


¼ cup plus 2 tablespoons (6 ounces) dark rum

¼ cup plus 2 tablespoons (6 ounces) ginger beer

1 tablespoon (1 ounce) ginger liqueur, Barrow Intense Ginger Liqueur strongly preferred

1 lime wedge


  1. Fill a tall glass with ice. Pour the rum in first, then the ginger liqueur, and last the ginger beer.
  2. Stir just once and serve with a lime wedge on the glass.
