Freekeh is an ancient Middle East grain that has been rediscovered in recent years. It consists green wheat that has been sun-dried, cracked, and roasted. It is delicious in a salad, soup, but you can make it like rice, and serve it as as a side dish with fish, chicken, lamb or beef.


2 cups whole-grain freekeh

5 cups low-sodium stock or water

1 teaspoon salt


  1. Fill a large pot with 5 of cups low-sodium stock or water, add the freekeh and bring to a boil. Add 1 teaspoon of salt, cover the pot and simmer over low heat for about 40 minutes, or until the water is absorbed and the freekeh grains are tender.
