French Hot Chocolate

This thick and intense hot chocolate is frequently served in French cafes. For pure chocolate lovers, it doesn't get richer than this. For those who prefer sweeter or creamier versions of their chocolat chaud, serve it with sugar and cream on the side, just as you would do with coffee. The recipe easily doubles or triples.
1 cup whole milk
3½ ounces high-quality bittersweet or dark chocolate (at least 70% cocoa), finely chopped
- Heat the milk in a small saucepan set over medium heat until it just reaches a simmer.
- Add the chocolate and stir constantly until melted and smooth, but do not let the milk boil. Pour into a mug and serve immediately.
