Garam Masala Spice Mix, Version #2

Garam Masala is a basic Indian spice mix that varies so much and is used so often throughout the country and the entire subcontinental region, that we had to add another version from Molly O’Neill.

Ingredients

¼ cup coriander seeds

¼ cup cardamom seeds

3 tablespoons cumin seeds

2 teaspoons black peppercorns

2 cinnamon sticks

1 teaspoon whole cloves

½ fresh nutmeg, grated

Instructions

  • Roast each ingredient, except the nutmeg, one by one in a dry skillet over moderate heat until fragrant, 10 to 20 seconds. Set aside to cool.
  • Remove and discard the papery shells of the cardamom. Combine all of the spices in a spice grinder or electric blender and process to a fine powder. Mix in the grated nutmeg.
  • Store in an airtight jar for up to 2 months. The flavor will diminish over time.
