Garam Masala Spice Mix

Garam Masala is a spice blend at the core of Indian cuisine. Blends vary by region, town, and even by family. Our version was adapted by Molly O’Neill for The New York Times from an original recipe by esteemed culinary expert Madhur Jaffrey.




  • Roast each ingredient, except the nutmeg, one by one in a dry skillet over moderate heat until fragrant, 10 to 20 seconds. Set aside to cool.
  • Remove and discard the papery shells of the cardamom. Combine all of the spices in a spice grinder or electric blender and pulse to a fine powder. Mix in the grated nutmeg.
  • Store garam masala in an airtight jar for up to 2 months. The flavor will diminish with time.
