Japanese Carrot Sesame Miso Dressing

This unique recipe evokes the sesame and ginger dressings frequently served in Japanese restaurants. Miso adds both salt and a umami while grated carrots are the surprise ingredient, adding sweetness, color and texture to this vegetable rich dressing.
All of these ingredients, once exotic, are now wonderfully easy to find at any large health food store and most major grocers in the Asian aisle.
