Lemon Vinaigrette

Lemon Vinaigrette

The flavors in this dressing will make you think it must be hard to make. It is, in fact, the definition of delicious simplicity.


1 teaspoon Dijon mustard

¼ cup fresh lemon juice

½ cup extra-virgin olive oil

½ teaspoon kosher salt

Freshly ground pepper, to taste


  • Whisk together the mustard and lemon juice. Whisking constantly, slowly drizzle in the olive oil. Season with the salt and pepper to taste.
  • Covered and refrigerated this will last about 2 to 3 days but it will separate and get even more lemony.
