Lemon Zest Pesto

Lemony tartness gives basic pesto a kick in this tasty version.
2 cups (75 grams) basil, packed
3 tablespoons (31 grams) pine nuts
1½ tablespoons lemon zest
1½ tablespoons fresh lemon juice
1 clove garlic roughly chopped
½ teaspoon salt
¼ teaspoon freshly ground black pepper
3 tablespoons finely, freshly grated parmesan cheese
5 tablespoons extra-virgin olive oil
- In the bowl of a food processor combine the basil, pine nuts, lemon zest, lemon juice, garlic, salt, pepper, and parmesan cheese.
- Add the oil in a steady stream with the motor running and process until smooth.
