Mediterranean Tomato Topping

This versatile topping brings the freshness of summer right to your table.
4 medium tomatoes, chopped, about 4 cups
¼ cup chopped basil
1 clove garlic, minced
2 tablespoons olive oil
2 tablespoons balsamic vinegar
½ teaspoon kosher salt
¼ teaspoon freshly ground pepper
The tomato topping can be made the night before; simply withhold the basil and add just before serving.
