Olive Oil, Lemon, and Sea Salt Mayonnaise

Homemade mayonnaise is simple to make with superior flavor results. Be sure to choose the freshest high quality ingredients.


1 large egg yolk, raw or coddled

2½ teaspoons fresh lemon juice

2 teaspoons Dijon mustard

Zest of ¼ lemon

1 teaspoon sea salt

½ teaspoon fresh ground black pepper

½ cup extra virgin olive oil


  • Add the egg yolk, lemon juice, mustard, lemon zest, salt and pepper to a medium mixing bowl. Whisk until combined and the mixture begins to lighten in color.
  • Slowly drizzle the olive oil in, whisking constantly, until emulsified. (Instead of hand whisking, you may also use an immersion blender, blender or mini-food processor.)
  • Cover and refrigerate for up to 3 days.

    If you aren’t a homemade mayonnaise fan, substitute Hellman’s mayonnaise with olive oil and whisk in the lemon juice, zest, and ½ teaspoon salt.
