Pannukakku (Finnish Dairy Custard)

A quick and easy dairy custard that is as yummy as can be. Homemade Lingonberry Sauce is fabulous with this, but if you are pressed for time, apricot or peach jam would work as well. For maximum drama, serve this immediately on taking out of the oven, when it is puffed up. If you wait, it will fall like a souffle, but it will still taste good.
6 tablespoons unsalted butter
1 cup all-purpose flour
1 cup granulated sugar
2 cups whole milk
1 tablespoon pure vanilla extract
- Preheat the oven to 350°F. Place the butter into an oven-safe 9- by 13-inch pan and put the pan into the oven. Let the pan to melt the butter until it sizzles.
- While the butter is melting, combine the flour, sugar, eggs, milk, and vanilla in the bowl of a a stand mixer (or if you are using a handheld electric mixer, in a large mixing bowl). Beat until frothy.
- Remove the pan from the oven. Using a pastry brush, distribute the melted butter evenly over the inside of the pan. If there’s any excess butter, let it stay on the bottom. Pour in the batter and return the pan to the oven. Bake for 40 minutes, until nicely puffed. Serve immediately with Lingonberry Sauce.
