Parmesan Pepper Popcorn

This crunchy and tangy popcorn is a quick and easy gluten-free snack to sate late afternoon tummy grumbles or to accompany family movie night.
1 tablespoon vegetable oil
½ cup popcorn kernels
2 tablespoons olive oil
3 tablespoons finely grated Parmesan cheese
½ teaspoon salt
10 grinds black pepper
- Place a six-quart sauce pan on the stove over medium-high heat. Add the vegetable oil and one kernel of corn and cover the pan. When the kernel pops, remove the lid and add the rest of the popcorn.
- Return the lid to the pan and cook, shaking the pan occasionally to distribute the kernels evenly over the heat. Continue shaking occasionally and remove the pan from the heat when there are about 3 seconds between pops.
- Transfer the popcorn to a large bowl. Drizzle the olive oil over the top, then sprinkle with the cheese, salt, and pepper. Stir to combine and serve. The popcorn will stay fresh in a sealed plastic bag for up to two days.
