Red Velvet Smoothie: A Beet and Chocolate Smoothie

Beets and chocolate make a surprisingly sweet and satisfying combination. Add something new to your smoothie routine!

Ingredients

1 small raw beet, peeled and chopped (about 1/3 cup)

1 cup unsweetened vanilla coconut milk, or vanilla flavored milk

½ cup fresh raspberries

1 ripe banana, peeled and sliced, frozen until solid

1 cup ice cubes

½ cup plain or vanilla flavored coconut yogurt

2 tablespoons cocoa powder

2 tablespoons coconut nectar, or agave

Cacoa nibs for garnish

Instructions

  • Puree the beet, coconut milk, and raspberries in a blender on high speed until smooth.  Add the frozen banana, ice cubes, coconut yogurt, cocoa powder, and coconut nectar. Blend until smooth. Garnish with cacoa nibs.
