Soft Scrambled Eggs with Mediterranean Tomato Topping

Scrambled eggs get a new twist with the addition of Meditteranean-style tomatoes.
4 large eggs
¼ cup heavy cream
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
1 teaspoon unsalted butter
- Whisk the eggs, cream, salt, and pepper in a medium bowl.
- Melt the butter in a medium sauté pan over medium heat. Add the eggs and cook, constantly stirring, until there are small curds and no brown spots. The finished texture should be soft and semi-runny.
- Remove from heat and divide between 2 serving plates.
- Distribute the tomato topping evenly over the eggs.
