Yogurt Crema

Yogurt Crema

This creamy, nutty sauce tastes great drizzled over falafel on a sandwich or served alongside falafel balls as hors d’oeuvres. It is also a delicious condiment for vegetable crudités or any other Mediterranean-inspired fare.


½ cup whole milk or low-fat yogurt

1 tablespoon tahini paste

1 tablespoon water

1 tablespoon finely chopped fresh parsley

1 tablespoon finely chopped fresh cilantro

1 teaspoon finely chopped fresh mint

½ teaspoon fresh lemon zest

1 tablespoon plus 2 teaspoons fresh lemon juice

½ teaspoon granulated sugar

¼ teaspoon salt

Several grinds of black pepper


  1. In a medium bowl, combine the yogurt, tahini paste, and water and stir to combine. Add the parsley, cilantro, mint, and lemon zest and stir.
  2. In a small bowl, combine the lemon juice, sugar, and salt and stir to dissolve.  Add the lemon juice mixture to the yogurt mixture and stir to combine. Season with freshly ground black pepper to taste.
